I seriously question this "unclean" designation.  It probably relates to
cloven hoofs (I think ostriches have a split foot) - which may have been relevant
in biblical times, but come on - we are not living back then.  Apologies if
you are really committed to this taboo for religious reasons, but I seriously
doubt their relevance today.  We have a lot more possible problems with food
today ;)
