Actually, I would tell them that I have many religions.  If pushed for an
example, I would say:

1.  I believe man evolved
2.  I believe man's ability to come up with new technologies is infinite
3.  I believe naturally occurring foods that we have eaten for the majority
of our evolution are best for man (logical conclusion based upon number 1)
4.  I believe in minimal government
5.  I believe in open borders
etc.

I could probably go on all day listing all the religions that I have.

I think religion is nicely summed up as "If you believe what you can't see,
you will be rewarded by seeing what you believe".  It's when you start
believing something that can't be conclusively proven that it becomes a
religion.  Unfortunately, we cannot prove or know everything, so it is
impossible for any human being to not have religions.  For me, it is
helpful to realise that I do not know for certain that paleo is the best
diet for man, I just believe it is based upon my logical conclusions.  And
that's the best that any of us can do until more accurate data are obtained.
