Among the books listed on the www.paleodiet.com link-page I've found Uffe Ravnskovs' "The cholestrol myths" to be most enlightning. Ditto Wolfgang Lutz's "Life without bread" (although I obviously - German teacher and all - read the German version). Eades' & Eades' "Protein power lifeplan" is a good and comprehensive (but easy-to-read) intro to paleo-eating and micro-biology (As in "What happens when I eat X?" and "What does nutrient Z do?"). Ray Audette's "Neanderthin" of course being the classic. Not so useful: Loren Cordain's "Paleo diet" is somewhat of a disappointment. Get "Protein power" and "Neanderthin" instead!
Cheers and happy hunting!
