As long as there is a fast loss of water from the food in a
dehudrator without thermostat its temperature will stay low
(most of the energy is used for the water to evaporate).
As meat starts with a low water content, it will sooner get hot
than veggies with a high water content.
You can detect if the food is still loosing water if it is lower
in temperature than tha dehydrator air.
