What are these enzymes that you want?
Enzymes are primarily proteins with added moieties. They are not 'living' and
thereby can not be 'killed' but you may mean to not destroy their enzymatic
function. The enzymes are digested [hydrolysis] when eaten and the proteins
are broken down to polypeptides and amino acids. Whatever functions the
enzymes to which you refer had for the salmon are certainly not carried out
whether eaten live, fresh, dried or cooked.
