This is the USDA database, version SR14.

There are additions of beaver, opossum, muskrat and bear.
And probably a couple of others. Unfortunately there is no
complete fatty acid profile for these meats, just a single
"beaver = 4.8% fat", "bear = 8.3% fat" figure.

You have to wonder if those figures are for a whole carcass,
or just a 'bear steak'.

Whole carcass beef is about 23% fat. A lean steak is about 8%.
