Ah..........  so that's the difference.  How interesting.   I guess then
we have a mongrel mix here because we just dump all chicken, pork and
beef fat into the same pot and cook the goop until it is nice and clear.
Takes about 4 days generally.

Thank you for correcting me as I have learned something nifty this day.
