We Paleo folks already know about the health benefits of eating fats. Many of
us use butter and olive oil, not strictly Paleo, but still pretty healthy
from our point of view. I don't use any other vegetable oils and certainly
avoid trans fats like the Plague. But I have a weakness for mayonnaise. I
love chicken, shrimp, tuna salads in the summer, and sauces made from mayo
and mustard or curry powder on hot dishes. I used to buy Canola mayonnaise
from the HFS, but even this is made is made from a vegetable oil I would like
to avoid. Forget Hellmann's. It may taste the best (I personally think it
does) but it's made from soy oil. GASP! Sometimes I make my own from olive
oil. Still, I'm wondering if it's possible to make some kind of mayo type
dressing using coconut oil? The problem is, it seems to me, that coconut oil
is solid at room temperature. Anyone have any ideas? Meanwhile, I have found
a lot of interesting information about coconut oil. I prefer not to think
about how much more it costs than even good quality olive oil, but we're
saving a fortune by not eating out much anymore, right? And with all that Ray
says in Neanderthin notwithstanding, I still have to SHARPLY curtail calories
to lose any weight. So I've talked myself into it- I'm gonna buy coconut oil
