salicylates would really be a trick: it's amazing how many fruits and
veggies have salicylates in them.  But most paleo foods are very simply
cooked, without sauces, spices, etc., and you totally avoid all the
packaged, overprocessed foods full of preservatives and other glop.

Strict paleo eating eliminates most of the common allergens: soy, dairy,
peanut, wheat, chocolate, corn.  Problem items still paleo include tree
nuts and shellfish.  Lamb is often used in exclusion diets,
paleo by our definition.   If I had to design a paleo exclusion diet, I
would choose a few foods at a time.  Lamb or buffalo meat and fat
will keep you going while you figure out some of the other stuff.
People may also find out that by getting off the grains and dairy,
other sensitivities they have might go away as time passes.
