rats...   (I hope this is an adequate sound of ranting)

It's often the grilled and dark browned food that tastes very good.
Seems it would be better to take the fingers off it.

If you really heat a protein and it becomes brown, that makes a good taste.
Probably the same machanism how commercial flavors are produced.
Denaturating any protein makes the "tasty" flavor.

ok - there are healthy favors which taste even better.
