It is amazing. It seems to be getting worse. People, even the "experts," take
no notice of the evidence even when its plain to see.

Regarding animal fat for cooking - I frequently cross the border into Mexico
to eat their carne asarde tacos, cooked in animal fat (pork lard) on a hot
plate. So good -- nothing comes close on this side. Also their pastries are
very light and flavorful for the same reason. We have done ourselves are
great disservice by changing to vegetable cooking oils.
