It varies according to the pressure, but it seems like generally you're
cooking at 250° F or 121° C, which is less than you'd be using in the oven.

As for cooking time, this also seems to vary according to how well done you
want your meat. This was more the point of my original question. The stuff
my mother used to make was always cooked all the way through, though that
was how she served pretty much everything.

choice of rare to well done:

I was also wondering if there were any issues with the pressure cooking
method itself, like some of the things that have come up on the crock pot.
