Lactic acid is a by-product of anaerobic respiration.  It is the nasty
stuff that makes your muscles hurt after a workout that your lungs
couldn't keep up with.  Heat destroys lactic acid which is why you
are supposed to take a hot bath when your muscles start to ache after a
workout.

There are several sources of lactic acid, but it is not a dairy product.
