There are quite a few excellent recipes in the allergy archives.
Directions for how to search there are in the information you received
when you signed up.  Basically, with a child this age, just make the
foods you would normally eat in your home without cheese or milk.  Find
a milk substitute that works well for you (my kids love Rice Dream).

Some of our favorites include:  Shepard's Pie, chili, hamburgers,
spaghetti (I make my own sauce), meatloaf, broth soups (I make tons of
soup this time of the year), roasted sweet potatoes, burritos, fajitas,
scalloped potatoes, chicken and dumplings, baked chicken, etc.  When
they were younger we ate many of the same foods we do now and my
children don't really want cheese as they know it will make them sick.

Make a list of everything you CAN eat.  Figure out recipes the family
likes based on this.  Try not to think about can't have, concentrate on
we can have.  It makes your time in the kitchen so much easier and more
tolerable.

Speaking of more tolerable, you need chocolate.  My favorite is the one
bowl brownie recipe on the inside of the Bakers Parve (Orange box)
bakers unsweetened chocolate squares.  Use Fleishmann's Parve margarine
and it tastes great and is dairy free too!

As for eating out, we pretty much stick with McDonald's hamburgers and
fries here.  Occasionally we will have a Taco Bell burrito with beans
only but I worry about it.

Sorry I can't help you with a wonderful story about outgrowing an
allergy.
