The law says they must list everything that is put into a food
deliberately.  And some companies are even listing possible contaminants.
There is one minor exception for ingredients that make up less than 2% of
the product--they don't have to be listed in order by weight--but they
still have to be listed.

That doesn't mean that there aren't mistakes on labels.  But unless there
is a serious public health threat or the company is large and trying to
defraud the public, the FDA is unlikely to act.  Just look at the kosher
alerts about errors in the ingredients labels--it's not the FDA doing it.
OTOH, the fear of lawsuits is a pretty good reason for the companies to
police themselves.

I happen to have picked up a package of cheddar-flavored Almond Rella at
the Natural Foods Expo.  "Ingredients:  Almond milk (water, almonds),
caseinate (milk protein), canola oil, modified food starch,...."  Of
course, this is probably not the only flavor.
