I have a cookbook called "Allergic People Eat Desserts Too" that has
several.  They mostly use soy and/or rice flour for the flour, flax for egg
substitute, and whatever milk substitute you like.   I haven't actually made
any of the cakes, but if you give me an idea of what flavor you want to try,
I'll type in a recipe for you.

In case you'd like to try to order the cookbook, the phone contact number in
my copy is 403-281-2110.  It is a small family-run business in Canada.  It
has a nice section on substitutes for baking powder, butter, chocolate,
cream, eggs, glutenous flours, gelatin, milk, sweeteners, yogurt, plus some
other general tips.
