It may be used to help the vinegar flavor adhere to the chips -- at one 
time a lot of the fast food restaurants (BK and Mickey-D for sure) used 
it for that, and to help get the "golden" color to the fries.

At the moment, you can also get Cape Code Sea Salt and Vinegar - but 
watch them they may change.
