Spelt has a little gluten in it but I was told it can be tolerated by some
gluten sensitive people. It is a wonderful flour substitute for those avoiding
wheat because it has the same properties as whole wheat. It adds nice texture
to rice and chick pea flours.

Your wife might want to wait until her digestive tract is fully healed and
then try some spelt, first cut with other flours and see how she can tolerate
it. It makes good pancakes!
