Hi Charlie,
The best substitute for regular flour is the formula for most GF bread etc.
 It is two parts white rice flour,two-thirds part potato starck flour and one
third part tapioca flour.Example 6 cups white rice flour,2 cups potato starch
flour and l cup tapioca flour.
I ususally use half white and half brown rice flour but you could use all one
or all the other.
