Just a note.  We just went to Vegas a couple of weekends ago.  We gook our kids to the Tournament of Kings at the Excalibur.  This is where you eat with your hands and there's a show of jousting, acrobats, etc.

Before going there I spoke with the chef, Vern.  We went over the menu and I felt safe with the cornish hen and vegetables.  (which turned out to be just broccoli).  He told me to mention that I was there to the manager at the door.  I think her name was Julian or Jillian.  She was great.  She made a note of where we were sitting.  When the meals came out I noticed they had rolls and potatoes (questionable) on them.  I mentioned to her that the rolls and potatoes couldn't touch the plate.  She said they would make a special plate for Zachary (my son).  We had to wait about 15 minutes (we were late getting there anyway).  They gave him about a pound of broccoli.  The cornish hen was delicious and so was the broccoli.  He was very satisfied and said it was one of the best "plays" he'd ever gone to.  

You can call the Excalibur (702/597-7777) and say that you need X226 paged.  This is Vern's (the chef's) pager.  I would suggest doing this a couple of hours at least before the show.  Obviously, there could be other chefs on different nights, so, in that case just call Excalibur.  I found they were more than helpful.  He even said he would cook whatever I wanted him to cook.  However, I wanted our son to eat as close to what we were eating as possible.  He was a very happy camper.
