I would like to connect with people in my area who are eating gluten-free. To my knowledge, there are no support groups in the area (Allentown is the closest that I know of).

I was recently laid off from my job and am considering starting a gluten-free bakery in the area. I would like to get an idea of the demand for something along this line in this area. My specialty is cheesecake, but I would like to know what foods would be of greatest interest to those in the area.
