Thank you so much for the many responses.
For other sufferes like me, I have made a summary:

A general concensus is that the growling comesfrom gas.

To minimize in diet:
Broccoli, apples, cheese and other dairy (many celiacs are also lactose
intollerant)

Add to diet:
Starches such as potato, rice, corn (however, one said that corn was a
problem for them and another said that starches just lay in the stomach)
and GF bread.
More protine -- especially mild protines like fish, chicken, eggs and natural
peanut butter.
Other fruit and vegetable such as - grapes, bananas, mangos, peaches,
necturines, squash, green beans, apple sauce
Ice cream (Bryers) and milk if you are not lactose intollerant (many also
said these should be avoided, at least until the stomach heals)

"Medications":
Antiacids
Natren Megadopholis Powder (non-dairy) and Bifido Factor from Whole
Food
Psyillium
Primal Defense Probitiocs Complex
I-Glutamine
Mega-Zyme
Pancreatin Enzyme 1400

Books:
"Chronic Candidiasis" - Michael Murray
"Patient Heal Thyself" - Jordan Rubin
"Prescription for Nutritional Healing"
"Breaking the Vicious Cycle"
and of course, all the Gluten Free cookbooks.

Thank you all so much. I've already made some diet changes and we'll see
if the horrific grumblies settle down.
