First - thanks to all who replied and there were many of you who took this course successfully.
  Most felt it was a CYA answer and quite a few have used the frostings and meringue powder with no ill-effect.
  Also it was suggested that you could make your own using the recipe in the Wilton  book or online recipes  or using a Betty Crocker icing but add more confectioner sugar to thicken.    Someone also suggested using the Kroger frosting but asking them to open a new one for you.
  Thanks again to all who answered.  I am going to try my own recipe and see how that works out.  If not I will go ahead and use the Wilton one.
