I'm trying to lose weight and keep my diabetes under control, so what a pleasure it was to find Purely Elizabeth cookie mixes at Whole Foods this week. A cookie that is healthy and not junk-food.

I bought the Oatmeal Cherry Chocolate Chip Cookie Mix, and they are egg-free, dairy-free, and gluten-free, and the flours and sweeteners are also mostly low-glycemic. And it has fiber.  You just add applesauce, oil and vanilla.  

They taste like good oatmeal cookies, not a healthfood. Since I cut out sugar months ago, they do still taste sweet to me, but not as sweet as some of the other products on the market.  (Everything tastes sweet or salty, once you cut out sugar and salt.)

Just watch the cooking time.  I got distracted and went past the 14 minutes, and the bottoms started to burn on the top tray. I did follow their directions to use parchment paper. I usually don't.

I have no connection with Purely Elizabeth.  I also bought one of their cereals, but haven't tried it yet. The ingredients look like something good to toss into a healthy muffin.

Hurray for gf companies that aren't targeting the toddler and teenage sweet-tooth.  And I honestly think if you don't reveal  the ingredients, your kids will love these cookies.

I'm honestly thinking of baking up a batch and shipping them to my young grandchildren across country.  They won't know it's from a mix!!! And this was so easy, I'm hoping the Whole Foods near my kids carries it, so I can bake them with the tots when I fly out to San Fran next visit....or I'll put the mixes in my luggage to take with me.
