Hi All--

I'm so seldom creative enough to come up with gf
recipes, that I just had to share this one with
you...I made it for a Boss's Day potluck we had here
at the office - there was none left.

1 medium to large apple, cored and chopped into
bite-sized pieces (any red apple adds color; I used
Red Delicious)
6 oz. uncooked Rotini (spiral pasta - gf, of course)
1/2 c. gf salad dressing or Mayonnaise
1/4 to 1/2 c. gf lemon yogurt
1/2 c. celery, chopped or diced
1/2 to 1 c. chopped walnuts or walnut pieces
1/2 c. chopped dates (optional)

Cook pasta according to directions, immediately rinse
with cold water and set aside to drain. Mix with spoon
or whisk the salad dressing and lemon yogurt (I used
1/2 c. mayo and 1/2 c. lemon yogurt). Combine the
chopped celery, apple pieces and dates - pour salad
dressing/yogurt mixture over and mix well. Add the
rotini last and mix. I found the rice pasta isn't firm
like wheat pasta, so toss or mix gently. You can add
the walnuts now or wait to sprinkle them on top at
serving time. (I made the salad the night before and
refrigerated it until serving the following day at
lunch)

I lined a square 9" baking dish with green leaf
lettuce and spooned the salad into the center, then
sprinkled walnuts over the top.

Total prep. time: 20 minutes
Serves 10-12
