This recipe reminded me of one our favorite GF oven-fried chicken recipes
that we haven't had in a while but now I'm inspired to do again!  We use
"Salad Eatos," an organic corn crouton ( advertised as wheat-free,
gluten-free right on the bag!)  made by Santa Cruz Fine Foods/R.W.  Garcia
Co., Inc.  We buy them in our local grocery store produce section and they
come in a variety of flavors, our favorites being the Garlic Parmesan and
the Tomato Basil.  Either flavor (and probably either of the other two
flavors, which I can't recall at the moment), when crushed fine, can be
used to coat chicken breasts or tenders.  I typically dip the chicken in an
egg/soy milk (or reg.  milk) wash, then coat with the crushed croutons, top
with a little melted butter and bake as below.  It's delicious!
