Further to the insurance discussion, I recently applied for and was granted Long Term Care Insurance.  I was totally honest about all health issues including having celiac disease.  They also check health records.
If I had been denied, I would have gone to the state insurance commissioner.  They are real advocates for the consumer and I assume every state has such an office.
