I wanted to report that I just returned from a short stay at the Walt
Disney World Resort and had a wonderful time. I ate at the Flying Fish
(Boardwalk), Coral Reef Restaurant (EPCOT), and ESPN Club (Boardwalk)
with no prior notice to arriving. I talked to the chef's at both
restaurants (I never trust the waiters, they don't know enough to convey
they information and mono & di-glycerides really bother me). Anyway,
both chefs were really great, helped me look through the menus and
decide what to eat. In most cases, we had to pick and choose from
several entrees, but all of the chefs were great. I also thoroughly
enjoyed a character breakfast at Cindrella's Castle. The day before
going there I called and talked to a chef, he offered gf pancakes
(YUCK!!!), so he said I could have an omelet with mushrooms and cheese
(definetly not an offering to most folks, only special diets). When I
arrived, I talked to the chef that was there, we again went over what
the other chef and I talked about and he made me the most fabuolous 8
egg omelet. I have to say, I've had my cholesterol intake for the next
month, but it was GREAT!!

The moral is, don't be afraid to talk to the chefs, they really want to
please the customers. And, I think they also like learning about the
different diets and they enjoy the challenge. I frequently go to
restaurants to eat and ALWAYS ask to talk to the kitchen manager (again,
I don't trust the wait staff). My 6 year old daughter even knows the
routine and likes to tell the waiter that I'm allergic to gluten and
need to talk tot he kitchen manager (I've found this is the best way to
get the lay people to understand).
