Hi Everyone,

I've wanted to post this recipe for a long time but was trying to make it as
easy as I could as well as useful for everyone who might want it.  I have
taken out the buttermilk for those who are lactose intolerant as the original
recipe required it.

Here it is:

GF Orange Cookies by Barbara Emch

Preheat oven to 375 deg. Grate the rind from 5 oranges & squeeze the juice
(mix together and set aside).

Mix with wire wisk in medium bowl:
3 cups Bette Hagman^Òs GF mix
1 tsp xanthan gum
1 tsp baking soda
2 tsp baking powder

Cream in large bowl:
1 1/4 cups sugar
1 cup shortening
3 eggs
1/4 cup applesauce

Add 1 cup of juice & rind to creamed mixture. Add the dry ingredients to the
creamed ingredients & mix well.  Drop onto greased baking sheet by
teaspoonfuls 2 inches apart & bake for 10-15 min.  Frost with orange frosting
below.

Orange Frosting

Cream in medium bowl:
1/2 stick softened butter or margarine
3 cups confectioner^Òs sugar
3-4 T of orange juice & rind mixture or enough to make creamy.
