There was a recent blog about Aruba that we used to help us with our GF dining.  We found that our experience was slightly different than the blogger.  Below is what we experienced.  Eating out is always risky, be aware, and advocate for yourself.
HOTEL:
We stayed at the Marriott Resort hotel connected to the Stellaris Casino. They can accomodate GF in all of their dining locations and sell some GF items in their store.  The only item we could not enjoy was the gelato from the small counter shop in the foyer.  They do not clean their lines between flavors and indicate that there is a risk of contamination.  Fear not, later you will hear about a fabulous 100% GF gelato stand not to far away. The Marriott staff took wonderful care of us! We ate at La Vista and Ruth Chris.
DINING OUT:
Yemanja - FABULOUS menu and very knowledgeable staff.  We highly recommend this restaurant.

Linda's Dutch Pancakes - Great breakfast/lunch option.  Very aware of GF prep and use King Arthur GF flour. Pancakes are large enough to share for 2 people.

Garden Fresh Cafe - We left due to the limited options and language barrier of the staff at the time we went in.  Spanish or Papiamento speakers may have better luck.

Eduardo's Beach Shack - A fair option, hard to find.  It is on the beach, behind the Playa Linda timeshares which are in the rear of the Paseo Herencia. Some items have gluten so you need to speak to someone that knows what is what and not all the staff knew what was what.

Cheo's Corner - Everything here is GF. Columbian sandwiches and meat/rice dishes.          Address: Located inside of the open air Paseo Herencia mall, near the water fountain.

A Taste of Belgium - GREAT options for all meals. Very knowledgeable staff and vigilant kitchen staff.        Address: L. G. Smith Blvd 95, Noord, Aruba 

Stickhouse Gelato: Everything is GF, even the cheesecake gelato.  They have gelato bars (on sticks) that they can serve plan, dipped in chocolate, nuts, sprinkles, etc.          Address: They are inside of the open air Paseo Herencia mall, near the water fountain.

Madam Janette's - We had a BAD experience here.  One of the meals came out with a garnish of fried onion strings which are not GF.  We saw it and thought we were safe when the waitress came over to the tray, saw it, and took it away before it was given to us.  Needless to say, we later realized that all she did was walk back to the kitchen and remove the gluten containing item and return with the dish. No concept of why this would be an issue and how we could clearly see the remnants of the fried onion topping in the dish and that it was no longer safe.

SUPERMARKERTS:
Food is VERY expensive in Aruba.  Think about brining GF items that are must haves.  We had planed on some picnic lunches so we brought bread.  We ended up running out and found a loaf of Udi's frozen white bread - the only option at Super Foods for $23.99 USD.
Super Foods has GF options mixed within the store shelves.Ling IGA has a GF section and also GF options mixed among the food shelves.
And last but not least, PLACES that were suggested but we did not get to so I can't provide any info:Wilhemina Restaurant, lokaal 2, Wilhelminastraat 74, Oranjestad, Aruba
