Several list members have written to point out inaccuracies in the text
associated with the chart and the associated description of celiac disease
that I referred to in my earlier post today. In particular, the comments
regarding the seriousness, frequency and symptoms are off base and the
comment "As people with celiac disease get older, they can begin to tolerate
wheat." is absolutely false.

I must admit that I had only skimmed over the text and my intention was to
point out the chart which highlights the differences between an allergy, an
intolerance and CD.

Thanks to all who responded. I have taken the link off of
www.rochesterceliacs.org as well. My apologies for recommending a site
containing inaccurate information.

As for the original topic, here's my understanding of the differences.

Wheat Allergy: Immune system response to wheat as an allergen as in hay
fever or peanut allergy. The immune system does not attack the intestine.

Gluten Intolerance: Inability to digest wheat as food substance, similar to
lactose intolerance. No immune system involvement.

Celiac Disease: Autoimmune response to proteins in wheat, rye and barley
which causes the immune system to inappropriately attack and damage the
villi in the intestine.

Happy Holidays - Joel
