My experience is in looking at Kosher hot dogs in the New York City area
(Long Island).  It is NOT true that kosher hot dogs are GF: some are, most
aren't.
 
In all cases judging from the ingredients list, Sabrett hot dogs are OK, but
Hebrew National and Empire both contain suspect ingredients (HVP, as I
recall).
 
Even during Passover period, when GF versions of many foods are available
because they use "passover vinegar" which is assuredly NOT derived from
wheat, some kosher foods contain matzoh meal, which is made from wheat.
