Dear listmates,

I have enjoyed your many contributions and wanted to return the favor.  This
recipe is as easy as "Shake & Bake" and as good as old-fashioned fried
chicken.  I have used this for pork chops, also.

Oven Fried Chicken

Blend in a plastic bag:
1/2 c. GF flour (I use B. Hagman's basic blend)
2 t. paprika
1 t. salt
1/4 t. pepper

Heat oven to 400 degrees.  Melt 1/2 c. (1 stick) butter or margarine in a
shallow baking pan in oven.  Shake chicken pieces in flour mix.  Dip in
melted butter, turning to coat evenly.  Bake uncovered for 1 hour, turning
(with spatula) at 30 minutes.
