IgG-Mediated Egg Allergy and Egg Substitutes/Replacements

Did you know there is a very strong likelihood either you or someone you know is allergic to eggs?

Egg is one of the most allergenic of all foods, and minute amounts of egg can result in symptoms. This is also seen after contact with egg through non-oral routes. Although ovalbumin, ovomucoid, and ovotrans-ferrin have been identified as the major allergens in egg whites, other unnamed allergens of lesser importance have been identified. These allergens are also present in egg yolk.  This is important because components of egg may be individually used for specific reasons. For example, hen's egg lysozyme is used as a preservative in food and in medications. Individuals sensitive to hen's egg have been shown to be allergic to lysozyme.

Additionally, other egg proteins are found in cosmetics, shampoos, and various pharmaceuticals. When reading labels, keep an eye out for the following as they are indicators egg is an ingredient: Albumin, Binder, Coagulant, Egg White, Egg Yolk, Egg Yellow, Emulsifier, Globulin, Lecithin, Livetin, Lysozyme, Ovalbumin, Ovamucin, Ovamucoid, Ovovitellin, Powdered Egg, Vitellin, and Whole Egg.

With this said, the following are some suggestions for egg replacers...

Egg Beaters and other grocery-store available egg substitutes are typically made with egg whites (and in some cases egg yolks).   Because of this, they might not be suitable for individuals who are allergic to both egg whites and egg yolks.

Soy : Tofu is a fine and enjoyable egg substitute for recipes requiring eggs, such as quiches or custards. A good recipe for a one egg recipe is to purée 1/4 cup of soft tofu. It is important to keep in mind that although tofu doesn’t fluff up like eggs, it does create a texture that's really good for egg dishes. Tofu is also a great substitute for eggs in breakfast scrambles.

Additionally, here are some more egg replacement suggestions for baking and when eggs are called for in a recipe...

~ 1 egg = 1/2 mashed banana

~ 1 egg = 2 Tbsp. potato starch

~ 1 egg = 1/4 cup mashed potatoes

~ 1 egg = 1/4 cup canned pumpkin or squash

~ 1 egg = 1/4 cup puréed prunes

~ 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder

~ 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water

~ 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again
