Hi there,

I just had unbelievable success making corn dogs for my 6 year old
daughter.  I know this is not an item everyone is dying to eat, however,
with the State Fair coming up in the summer, this year I can make corn dogs
for my daughter and not feel so bad when she looks longingly at everyone
else who is eating one.  Anyways..... here is the recipe for anyone who is
interested:

GF STATE FAIR CORN DOGS

3/4 Cup Bette Hagmans Four Bean Flour Mix***
1-1/4 Cup Masa Harina (Purchase by the flours in the grocery store.  This
is Corn Flour for making tamales and tortillas)
2-1/2 teaspoons Baking Powder
3/4 teaspoon salt
1 egg
3 Tablespoons melted butter or bacon drippings
1 Cup +/- Milk

Mix dry ingredients in a bowl.  Wisk melted butter, egg and together and
blend by hand into dry ingredients.  This should be like thick cake batter.
Put hot dog on popsicle stick (craft stick for those of you with kids) and
coat hot dog first with a little dry flour mixture.  Swirl hot dog in
batter to coat.  Fry in vegetable oil for about 3 minutes.  ( This took me
a couple of times to get the temperature of the oil right)  Do not have
your oil too hot or they will burn and the batter will not be cooked on the
inside.  I found that if I turned them like toasting a marshmallow, that
worked best.

I also cut my hot dogs in 1/3 and that made mini Corn Dogs. (much easier to
twirl)

Dip in mustard and enjoy!!!  As far as I'm concerned they tasted just like
the "real ones".

***Bean Flour Mix is available from some of the mail order companies or you
can mix up your own from Bette Hagman's Book "The Gluten-Free Gourmet Bakes
Bread".  So far I have found it to be an excellent recource.
