I am trying to get on a gluten free diet and have been checking labels on
things such as cheese and butter etc.  I would like to know how we figure
out what things are such as in some organic cheese I bought today.  It said
it had "vegetable enzymes".  What are these?  Also, what is annato?  I hear
we should not consume this.  It seems to be in most butter and margerine.
I found some butter that did not mention this so I bought it.  It was by
Tillamok at Trader Joes.  How about things that say they contain vegetable
coloring?  This seems a little overwhelming!  Thanks, Kathy
