I live in Texas where the Mexican food is authentic.  I have been making
my own enchiladas with homemade gravy (sauce) for years.  Today I tried
to make the gravy unsuccessfully.  I only have limited flours at this
time however; getting others soon.  Have any of you ever tried making
gravy with success and if so, what flour did you use?
