Thanks to everyone who responded. Here goes:

There is a health food store in Flagstaff that has GF foods--New Frontiers.
It is easy to find also.  It is on the main drag in town, I-40, I believe.
Hey, and there is a really nice hotel in Flag also that probably could
accomocate CD.  It is a pricey place but very nice--Little America.  Best
wishes on your travels.  I used to live on the Hopi Indian reservation, 2
hours away from Flag.  Fascinating culture if you'd like to see some very old
traditional dances.

rib, turkey breast, baked poataoes, veggies)

Haven't had any luck with strictly GF restaurants in any of the three, but
these at least offer a chance for GF:
Yavapai Lodge Cafeteria in the village at Grand Canyon,
Farr's in Flagstaff
Cafe in Sedona

The first two are buffet style and the Cafe is Mexican.  I have had no
problems with any of the three but requires a little care at the Cafe since
it is off the menu.  Ask first.

Trader Joe's and Wild Oat

I've never had any trouble eating at any of the restaurants I've been
to - just look at the menu and be realistic - hamburgers without
buns, omelettes, salads. I've found that the local places (versus the
national chains) are safer - they want to please, and they cook
from scratch, so it's easier to eliminate things. There is an alien-
theme restaurant (grill) on the main drag that makes some
fantastic combinations for sandwiches that theya re happy to serve
on lettuce (sorry, don't remember the name, but the locals will
point you). The local place that is known for its omelettes is also a
good bet (again, ask a local). There is a large HFS in Sedona, but
I've always had supplies left from Scottsdale, so I've never gone
there...I would also bet that Flagstaff, being a university town, also
has some decent HFS.
