Regarding two recent postings about Mission Valley tortillas, lime water and gluten status:
Lime water does not contain gluten by nature. It is just a basic chemical (calcium) dissolved in water to form a chemical solution called calcium hydroxide. The corn kernels are soaked in the lime water to soften them before additional processing. Hominy grits (or often called just hominy) are made in a similar way. Someone would have to deliberately contaminate the lime water solution or the corn with gluten to make the tortillas non-gluten free.

I have had contact with Mission Valley in the recent past and even posted information about their gluten-free products to this list service. They are very responsive and very responsible regarding the gluten or gluten-free status of their products. This is one company that I truly believe understands the importance (medically and commercially) of the needs of the celiac community. I have no financial interest in Mission Valley other than to see them survive as a resource for gluten-free products in an otherwise limited and complicated supply chain.
