Hello Michael.
    I am a celiac and have had the delightful pleasure of dining at PF Chang's in Albuquerque, NM a few times.  I am aware that problems can occur in any service industry dealing with the public, but I would ask you to pass on to higher management what a wonderful service your company is providing to celiacs.  My food has been most carefully prepared, and my family always says that my food is better than theirs, which is chosen from the regular menu.
    I apologize for people who complain when a company is striving to serve a select community, and I applaud your efforts and thank you deeply for this wonderful opportunity to consume a delicious meal.
    Thank you again, and again, please pass this on to higher management.
