Thanks everyone for your responses.  Here’s a brief summary of thoughts and suggestions:

Find a doctor who practices "complementary medicine" or "functional medicine" (there are directories online).
Rechecing thyroid
Concentrate on nutrient dense foods. Bone soup eaten once a week or so is wonderful to help you recover.

Essentially, most agree that my symptoms are common with CD.  Seems most went through the weight gain.

For those asking, yes, I’ve had my thyroid checked, as well as screened for diabetes.  I do know I have osteopenia and low Vit D.  Everything else came back normal.  Except my thyroid and sugar were off, but after further sugar tests, they felt i was fine.  And thyroid he believed was normal for me.  But it seems those numbers may differ for CD patients and the recommendation is to find a doc who will treat it.

I did have anemia last fall and that’s how the CD was found.  I received an iron transfusion.  And although my numbers fluctuate, I’m still in the normal range.

I did call Wake Forrest Baptist and have an appt in August with a new GI who I was told by the office is great with CD patients.  In the meantime, I hope I have enough energy to start working out and get this weight off!
