Recipe:
   
  2 cups buttermilk
  4 tbsp soft - not melted butter
  2 eggs
   
  2 cups brown rice flour
  1 cup corn starch
  1 1/2 tsp xanthan gum
  1 tsp salt
  1 tsp soda
  2 tsp baking powder-heaping
  4 heaping tsp sugar
   
  Beat eggs in a medium bowl.
  Add 4 tbsp of soft butter and break it into small chunks with the whisk
  Mix in 2 cups of buttermilk  (If the mixture is too dry, add more buttermilk)  The dough should be stiff enough to stand alone when dropped by spoonfuls into the pan.
   
  Mix all dry ingredients together in another bowl, then add to the wet ingredients.  Mix thoroughly.  Using a large spoon, place biscuit sized portions in an oiled sheet cake pan.  This makes 10-12 large biscuits or 15 to 18 smaller biscuits.  Bake approx. 15 to 20 min. at 400 degrees. Watch them closely.  Remove from oven when browning on top.  Open up a biscuit to test for doneness in the center.  If it is still gooey, return to oven for another 5 min.
   
  Get out the Raspberry jam!!!  Make sausage gravy!!  Forget the diet.
