Hello, I am new to this group.  I had a positive blood test 6 months ago and have been eating increasingly GF ever since.  I thought I had been doing well, because I feel much better.  However yesterday's blood tests shows that my numbers have not significantly decreased.  So I obviously have a lot more work do to.  
My question, though, is about my family.  I have a husband and two elementary-aged children.  At this point, I have no reason to believe that any of them have celiac disease (though I need to get my kids screened).  But because of my diet, I often fix GF meals just for the convenience of not fixing 2 separate dishes.  I learned that a GF diet is often not as nutritious.  I also learned that some of my vitamin/mineral levels are very low.  It could be due to malabsorption issues, but I was never really sick, so I attribute it more to the GF diet.  I am concerned that in my efforts to have convenient meals that I am shorting my kids nutritionally.  
Can anyone share how they have managed to make sure their non-celiac kids have a nutritious diet without going crazy cooking extra meals?
