Here is a summary of the replies I received about eating GF in Machu Pichu.
Their diet has a lot of potatoes, and they are generally not fried, so potatoes, fresh fruit and vegs should be fairly easy to find.
One suggestion was to Google GF Machu Pichu. I found several interesting links there.
Carry my restaurant card in Spanish, which I do anyway.  
Check the GF travel blogs.
I am going with Intrepid Tours and departing April 22.
