   Sorry it took so long I have not had a chance to summarize until today. 
   
  I will also resummarize on what dh did while there when he gets back next month.
  Thank soyu for all the great and helpful responses also.
  As you will see there were a lot.
   
  SUMMARY:
   
  I just found out about a place at Paris hotel.......go to www.wildfirerestaurants.com and look for locations in Vegas....think there is only one. This comany Lettuce Entertain You has gluten free menus which are the most comprehensive around. They just opened here in Atlanta and they even offer a gluten free bun for sandwiches and burgers! I have not been to the Vegas place but I'm sure they would offer a nice gluten free menu there as well. The one place I'd steer you away from is any Wolfgang Puck place. From what I hear they give you a very pricey, gluten free but boring, bland meal there. After all their specialty is pizza and unless something recently changed, they don't offer a gluten free version of any of them. 
   
  P.F. Changs. (inside the Aladdin) was the winner hand's down. Almost every single responder suggested them - The lettuce wraps are great.  So is the Chinese salad and lemon chicken) - lots of positive feedback on this one and their GF menu.
  Outback, of course. Multiple locations.

  Best of all is Chinois in the Caesars Forum Shops ...they have a gluten free menu and GF soy sauce plus the food is excellent....ask for Michael Yi, the manager. or Amy Richardson (702) 737-9700

  Cheesecake Factory at Caesars - call Pam Johnson or Linda Osmundsen at (702) 792-6888 - very helpful and knowledgeable.
  At Wynn which is very close to Paris there was Daniel Boulud Brasserie which overlooks the lake.  Specify your gluten sensitivity when you make your reservation and you may end up with the same knowledgeable waiter.
  The restaurant at the Paris (Mon Ami Gabi) to be incredibly understanding, answered all my questions and said that they tag your order with a bright yellow piece of paper with your allergies/intolerances written on it so there are no mistakes made and the food was great
  At Wild Bill's Buffalo Wings, the waitress showed me all the sauces that flavor the wings so I could see which were GF (there were some Definite surprises)
  The chefs at the Hilton Hotel (buffet) were very familiar with gluten Issues and helpful.
  Whole Foods, Wild Oats and Better Nutrition have a variety of GF products available, salad bars and even GF pizza at Wild Oats.

  Outback on the strip (above Harrah's casino). Typical Outback. 
   
  Jimmy Buffett's Margaritaville (Flamingo) Not the easiest for gluten free, but it can be done. Fun environment. 
   
  Grand Luxe Cafe (Venetian) - not specifically GF, but every time I've eaten there (at least six or seven), the servers are knowledgeable. To my knowledge, my food hasn't been contaminated. 
   
  Delmonico Steakhouse (Venetian) - not specifically GF, but again accommodating. Not my favorite place, as I thought it was pricey considering the experience, but I did not have any gluten problems. 
   
  Eiffel Tower Restaurant (Paris Hotel - reservations recommended)  Not specifically GF, but the chefs are accommodating. The food wasn't my favorite, but it wasn't bad and I'd probably eat there again. 
   
  Steakhouse 46 (Formerly Conrad's) (Flamingo - reservations recommended) I have eaten there when it was Conrad's and since it was changed to Steakhouse 46, and it's been excellent every time. Not specifically gluten free, but again, the chefs will accommodate anything are knowledgeable. They did not contaminate a single thing on any of the occasions I've eaten there. Quieter atmosphere with a nice dining room and excellent food. 
   
  Voo Doo Cafe & Lounge (Rio - 50th and 51st floors - reservations recommended) - not specifically gluten free, but again excellent chefs who are familiar with gluten issues and are very careful.  It's a fun atmosphere and the food is pretty good.
   
  just returned from there the week before Christmas and pretty much enjoyed ourselves with no "mishaps".  I assume you are visiting the "Strip", so I will tell you what I know about that.  In Paris, they have a breakfast buffet that is VERY GOOD for $14 at Le Village, but they have no gf breads or anything like that.  They have individual chefs at each "station" that can tell you how each food is cooked.  The omelets are gf and hash browns, along with all the fresh fruits.  They also cook eggs to order if you don't want an omelet.  I know it sounds pricey, but it includes all you can eat and drink for that price.  We also ate at the buffet at Stratosphere, but I wouldn't recommend it because the food wasn't very good; I just ate the things that I knew for sure would be gf, but they were kind of bland.  There is a McDonald's close to MGM Grand and I believe several of the hotels also have one inside.  If you don't have transportation, I recommend riding the Monorail.  It is
 the fastest way around the strip with a one-day pass for $15 or a three-day pass for $40.  By the way, if you haven't seen the Beatles' LOVE--Cirque du Soleil, I HIGHLY recommend it!!  It is an indescribable experience!
