Funny about sleep.  I was one of those people when I was younger that would
lie in bed waiting to fall asleep and would be up early in the morning.
Even as a young adult I would be up at 6 in the morning after staying up
past midnite.  I normally go to bed between 10 and 12 and get up at 5:30 am
(even prior to GF diet).  The only sleep problem I had was that in meetings,
whether I had 10 hours or 5 hours sleep, if I wasn't involved or interested
I tended to nod off.  I went to the doctor about this problem and his advice
was to take some "no-doze" pills 1/2 hr before my meetings.  That was the
last time I saw that doctor.  My co-workers found the most interesting part
of the meetings was watching to see how soon I would fall asleep.  I mean I
fell asleep on managers, directors and even VP's, it just didn't matter who
you were if you weren't interesting I fell asleep.

When I was told I was celiac and that I would feel much better and have more
energy my thought was that I must be hyperactive as I was on the go all the
time anyway.  I have not found much improvement in the last 3 years on the
diet , other than staying awake in ALL my meetings and a 30 lb weight gain.
(P.S. - I wasn't underweight prior to this either).

The other thing worth mentioning is that the only symptom I had was frequent
anemia and since going celiac I haven't tested anemic.
