Hi, listmates

Well, I always think I have the gf diet down pat and then, lo and behold, a food manufacturer puts a monkeywrench in my theory. A new ingredient is showing-up in various foods and it's name is "inulin".  I became very concerned when I saw this ingredient in my kefir....I drink Lifeway Kefir on a daily basis for the probiotics that naturally occur in this yogurt-like drink and love it!  The new formulation has inulin added to it. When I began researching this stuff I read that it is a non-digestible food ingredient. It can be obtained from various sources, INCLUDING WHEAT. Lifeway folks say their's comes from chicory root, but their label does not provide that information. Everytime you see a label with inulin included in the make-up of the food you need to check with the company and find out the source. It should be clearly labeled with this source for the benefit of those who have a wheat intolerance or allergy. 

I would love to hear feedback on inulin, since I am trying to learn more about it. From all I've read, this will be an ingredient that we will see more and more in foods. Stoneyfield Farms is now adding inulin to their yogurts, as an example of another company making this change. 

For those who drink Lifeway kefir, please contact the company with your comments ....pro or con. They said they are waiting to hear from their customers in deciding on whether to keep this in their product. Their website is www.kefir.com
