I recently attended a celiac conference in Columbus, OH and the first
stage is slightly damaged villi, the 2nd stage is when the lactose
intolerance starts and the villi are more damaged. The 3rd stage the
lactose intolerance continues and the villi are about half the length
they should be. The 4th stage consists of no villi fingers and of course
the lactose intolerance. Dr. Alessio Fasano was the speaker.
