        A culinary/baking authority I am very far from, but I am
curious....when you say dairy-free is it because you are trying to avoid the
lactose or the milk protein?  If just the lactose element, do you have
Lactaid or Dairy-Ease milks available in your region that you could
substitute?  Those are lactose-free, but they still contain the milk
protein.

        For yeast-free breads, have you tried yet tracking down and
modifying  (using gluten-free flours in lieu of wheat flours) a Jewish
passover bread recipe or an Arabic pita bread (flat bread) recipe; those are
traditionally without yeast.
