Don't be sad, Miss Adrienne, be happy for them grits. We always makin' 
tha grits with tha lye, but dont leave no lye IN tha grits.  First we 
mix tha lye in with tha water, then we dump in tha shelled out corn 
kernals, with tha lye eatin' off tha skin off a each little kernal, stur 
and stur it over a day. Use a wooden paddle not yur hands. Then we rinse 
an rinse an rinse, get some a tha fresh water from tha crik, rinse em 
some more, cause we dont want that nasty ol lye ta hurt tha nice Miss 
Adrienne. Then we spread that corn on some fresh planed boards out in 
tha sun ta dry out, an bleach out in the mornin' dew, cause we dont want 
tha yellr grits, we them nice an white, so then theys dry and we grind 
them up in tha grits mill, coarse like, then thats all done, you got 
grits!, but only half tha battle, cause we still got ta cook up a mess a 
them grits some morning an you have ta get them grits started early, 
don't tell my daddy, but we get them grits started even before waterin 
tha horses, rememba doncha pour that water inta the grits, ya sift the 
grits inta the boilin water cause you dont want no lumps, its takin 
least ways three hours on them grits, so when your wakin up with the 
sun, Miss Andrienne, well, we got a nice mess a grits ready for ya. So, 
doncha be sad, be happy for yur grits. We even made ya buttah fresh 
yesta day, here, schooch up an have soma a this buttah on yur grits.
